Recipe: Budget Sunday Roast

There was some really lovely looking meat while we were out shopping on Saturday afternoon and I just couldn't help myself but buy this organic topside roast for only $10, god bless Australian meat producers. This would easily have fed 3-4 and we still have half a roast for sammiches after the boy and I tucked in to dinner.



Budget Topside Beef Roast

1kg boneless topside roast
2 clove garlic
2 tablespoons salt
fresh cracked black pepper to taste
5-6 cups of water

Method


  • Pre-heat your oven to 150C

  • Rub the beef with the garlic and salt, then crack healthy quantities of pepper over the meat

  • On a roasting rack with plenty of space underneath place the meat

  • Put 3 cups of water under the rack, this will keep the roast moist

  • Cover the roast in alfoil and place into the oven.

  • After 90 mins peel back the foil, turn the roast and cover with foil again

  • Replace the water with another 2-3 cups

  • After a further 60 mins remove the foil to brown the meat

  • Let rest for at least 20 minutes prior to carving, keep the meat covered with foil during the resting period

  • Serve with hearty gravy and plenty of vegetables
